We headed out for a fun field trip last Friday to the Children's Grand Park up in Seoul. We try to get out of the house a few times a month and explore this crazy country called South Korea. They have lots of animals and some interesting man-made "sculptures" and a botanical garden. Enjoy the photo walk through...My name is Emilee and I am the mommy to two very wonderful kids. We are a military family and love it! I hope you enjoy our adventures and my many ramblings along the way.

Freezer Cooking Round 1
I have recently been investigating a lot of blogs that have freezer cooking on them. I think that this may very well be the best concept since sliced bread! I have a few different blogs that I have chosen to follow including: Ring Around the Rosies, 6 Cents, and The Test Kitchen of Melissa Fallis. From these three I put together a game plan and set of recipes that I wanted to try and jumped head first into freezer cooking! (WARNING! - Most people are SANE and only cook 5 different meals at a time... I am NOT sane... the Hubby would call me INsane (but I don't think I'm inside sane, do you? silly Hubby! haha) and I prepared 10 different meals for supper and a few other non-supper foods.)
I chose Teriyaki Chicken, Sesame Chicken, Chicken with Honey Sauce, Salsa Chicken, Savory Chicken, Zucchini Stuffed Chicken Roll Ups, Sausage and Peppers, Lasagna, Easy Crockpot Beef Stew, Slow Cooked Beef Fajitas, Omelet Cups, Mini Gorilla Breads, and Pumpkin Bread. (See... completely NOT sane) (NOTE: I will be sharing the Omelet cups, Mini Gorilla Breads and Pumpkin Bread later)
This is pretty easy to do... write down how much of each item you need then cross off the items that you already have in your pantry/fridge.

Riley's Kindergarten Graduation
Our little girl graduated today from Kindergarten. I cannot believe how big she is!
They had a luau graduation and received a lei as their name was called and they crossed the stage.
Their class even sang a few songs for us.
Then it was off to the reception which included muffins, cupcakes and juice!
Davis Family Camping - Round 1
We have joined the camping world!
Our first family camping adventure was at a place called Mongsanpo Beach here in South Korea on the Yellow Sea. We went with a family that we love, Joe, Michelle, Hannah and Reagan (and their doggie Roxy).
We had to make a few purchases before we went including a new tent, cooler and chairs.
| That's our new tent and our new cooler underneath the watermelon. |
The kids LOVED the beach! They were drawn to the water and I was drawn to the gorgeous landscape.

Shame on me!
I haven't blogged since January!! I'm a terrible person! A lot has happened since January. First off, Elijah turned 2 on April 18th and we had a great birthday party for him outside at the nearby park.
Then, it was time for Easter.
After that, Riley turned 5! Her party was at the BX playarea.
Once all of the partying was over we headed to the states for a lot of fun with our families, but that's a whole different post. =)
The most recent happenings was my surgery. =( Yes, I had to have my gall bladder removed right after we returned from our vacation. I'm healing pretty well now, 9 days after surgery. I'm hoping that they will say I am good to go back to work, start driving again and maybe start exercising a little after my follow up appointment next Monday.
I will do my very best to update more often.... and I will get the post up about our visit to the states up ASAP!

2011 Trip to the US
We spent a whole year and a half in Korea before we got the chance to take a nice vacation, but it was well worth it! We flew out of Incheon International Airport for our first flight and landed in Tokyo, Japan where we had quite the layover! We were flying Delta and aparently they had computer issues which prevented us from boarding our next plane for an extra hour or more. We did find some AWESOME chocolates at the Toyko Airport. Once we got on our second flight we we ready for naps! Brad had some issues on this flight with the guy that he was seated next to. Apparently he was quite stinky! We landed in Atlanta next and ran as fast as we could through customs and to our next gate, but it was just in time to watch our plane pull away from the gate and head to the run way. We were supposed to be on a flight to Asheville, but Delta had to redirect us to Charlotte first and then into Asheville. What a day! 24 hours straight in airports/airplanes. My parents picked us up at nearly midnight in Asheville. My best friend Danielle was there too to meet us. We spent the night at my parents house then headed to Andrews the next day to spend 2 weeks with Brad's family.
Spending time with Brad's Family.
This is us at Newfound Gap, on our way to Pigeon Forge with Brad's family.
They kids in Pigeon Forge at the park.
After we left Pigeon Forge, we spend our second week just visiting with everyone in Brad's family. It was a lot of fun! After that we were off to Brevard to spend time with my parents.
