Meatloaf

Tonight we are having Meatloaf, broccoli and cheese rice, corn and rolls. I'm going to share my mom's recipe for meatloaf and give you a step by step view of making it.

Here's the recipe:
1.5 lbs ground beef
1/2 c ketchup plus enough to cover the top
1 small onion diced plus 1/2 small onion sliced
8 saltine crackers crumbled
almost 1/4 c milk
salt
pepper

In a large bowl add ground beef, 1/2 c ketchup, diced onion, crackers, and milk. Sprinkle with salt to your liking, I go over it twice with the salt shaker and then put a light coating of pepper on top. Mix everything together until blended... be sure to squeeze the meat as you're mixing so that it makes into a loaf. Place the loaf into an ungreased glass dish. Add a layer of ketchup on top. Place the sliced onions around the outside, they will cook in the juices that come out of the loaf. Place in a 350 degree oven for 1 hour. I serve with brown gravy, but it isn't necessary. Enjoy!
